Good things do come in small packages and peanuts are perfect examples of this. They pack a healthy punch and can do wonders for us. They boost memory power, prevent gallstones, have good amounts of folate which is excellent for pregnant women and also protect against certain cancers. The addition of black pepper, chillies and lemon add a tangy twist to this salad.

1 medium onion
Salt to taste
¾ tsp black pepper powder
¼ carrot
½ cucumber
2 tbsp raisins
2 tsp vinegar
1 tomato
¾ cup boiled peanuts
4 – 5 green chillies
¼ lemon
For garnish
Black pepper powder
Sliced lemon
Green chillies
Carrot peels
Shelled peanuts
Mix finely chopped onion, salt and black pepper powder in a bowl.
Now, mix carrot peels, cucumber peels, salt, raisins, vinegar and black pepper powder in another bowl.
After this, mix chopped tomato, peanuts, finely chopped green chillies and lemon juice in onion mixture.
Next, put cucumber and onion mixture in the glass.
Garnish the prepared salad with peanuts, black pepper powder, sliced lemon, green chillies, carrot peels and shelled peanuts.
Your Boiled Peanut Salad is ready.
